Bacon Avocado Egg Rolls

Ingredients

  • avocado - 2, large, ripe, peeled, pitted, and sliced
  • lime - 1/2
  • salt
  • pepperjack cheese - 6-7 slices
  • bacon - 12-14 slices, cooked
  • egg roll wrappers - 12-14
  • flour - 1 tbsp
  • water

Instructions

1. Heat about 2" of oil to 350 F in a large frying pan.

2. Lay out avocado slices on a plate or large bowl. Drizzle with lime and sprinkle with salt. Place flour in a small bowl and add water to make into a watery paste.

3. Put one egg roll wrapper on your work surface, with one corner pointing towards you. Lay 1/2 slice of cheese in the middle. Place 1 slice of avocado on top of the cheese, then one slice of bacon, broken in half. Top with another slice of avocado.

4. Fold the tip of the wrapper pointing towards you over the stack of avocado. Fold the left & right points over the middle and roll up egg roll almost completely, being careful to fold tightly with no openings for ingredients to fall out of the roll. With a finger tip, dab a bit of the flour paste on the remaining corner at the top, then seal this corner onto the egg roll to close it.

5. Repeat this process for the rest of the egg rolls.

6. Carefully place rolls into the oil and cook until golden brown, turning once during the frying.

7. Remove from oil and allow to drain and cool on a plate lined with paper towels.

8. Serve whole or cut in half.
